Why are offerings generally fruits, a chicken, roasted pig or sheep, and not cows and ducks?

People in Guangdong, for example, will buy duck heads during the harvest season, while people in Hainan never use ducks because they do not like the sound of their quacking. Generally, people offer chickens, fish, pigs, and shrimp, even though the word for shrimp sounds like “death” in Chinese. Some people offer cows, which symbolize loyalty.
